Wild Rice Stuffing

Here's a quick and easy stuffing recipe that gives a different flavor to a traditional dish.
4 cups water
1 pkg. 6oz. long grain and wild rice
1 celery rib, chopped
1 small onion, chopped
1/2 cup butter or margarine
2-1/2 cups crushed seasoned stuffing
1 -1/2 cups chicken broth
Remove liver from giblets if desired.
Place giblets and water in a saucepan, cover and simmer for 2 hrs. or until tender.
Towards the end of the cooking time for giblets, prepare the rice according to the pkg. instructions.
In a small skillet, sauté the celery and onions in butter until clear, and add to rice. Drain and dice the
giblets. Stir the stuffing, broth and giblets into the rice. Spoon into an un-greased 1-1/2 qt. baking
dish. Bake, uncovered at 350 degrees for 25-30 minutes to heat through.
Yields 8-10 servings.
