Vegetable Rice Dinner

  Here's a vegetable and rice dish that is very easy to fix, and best of all, fat free!!!

 


Ingredients:
3/4 cup raw rice
1-1/2 cups water
1/3 cup onion, chopped
2 tbsp. green pepper, chopped
3 tbsp. carrots, shredded
2 tbsp. fresh parsley, snipped
2 bay leaves, or 1 Tbs. soy sauce

Directions:

Combine all ingredients in a saucepan. Heat to a boil.

Reduce to simmer and cook, covered, for 20 minutes.

Fluff and serve.
