Vegetarian Vegetable Soup

This is a very simple and easy recipe that I have developed for vegetarian vegetable soup. The Italian style tomatoes add a special zest to the soup. I know you'll like it. 

Special note: You can add anything that you like to this soup, just go for it!!!


2 large cans of Veg-All's Home Style Large Cut Vegetables, undrained

2 cans (14oz) vegetarian vegetable broth

1 can Italian Style diced tomatoes, undrained

1 cup fresh chopped mushrooms

1 tsp. black pepper

1 tsp. garlic powder

1 Tbs. dried chives

1 tsp. salt

1 cup instant white rice (optional)



In a large cooking pot, add the Veg-All, tomatoes, broth, mushrooms, and all listed seasonings.

Bring to boil, then cover and simmer on reduced heat for 1 hour, stirring occasionally.

Near the end of the cooking cycle, stir in the 1 cup of white rice and finish cooking for 10 minutes.

Serve in bowls, garnished with a sprinkle of dried marjoram for that very special flavor.

(Marjoram is like a mild oregano. Very pleasing taste)
