Sweet Italian Sausage Soup

Ingredients: 

1 lb. bulk sweet Italian sausage.

2 or 3 Tbs. olive oil

1 med onion (diced)

2 cloves garlic (minced)

2 carrots (chopped)

1 large potato (diced)]

2 bay leafs

2 quarts chicken stock

2 cans cannellini beans (1/3 of one can mashed)

1 large bunch chopped favorite greens

 

Directions: 

Brown sausage with oil, onions, garlic, and carrots.

Add potato, bay leafs, beans, and chicken stock.

Simmer for 20 minutes.

Add freshly chopped greens.

Simmer for another 10 minutes.

Salt and pepper to taste.
