Spicy Cornbread

2 cups self-rising cornmeal mix

1 Tbs. sugar

1 large egg, beaten

1-3/4 cup buttermilk

1/4 cup vegetable oil

1 jalapeno pepper (seeded and diced)

1/2 lb favorite breakfast sausage (cooked, crumbled, drained)

4 oz shredded Mexican blend cheese


You will need a well seasoned 9" iron skillet

Preheat oven to 450 degrees F.


Combine dry ingredients and add the egg, buttermilk, oil, and the pepper,

sausage, and cheese.


Place the well greased iron skillet in the hot oven for 5 to 7 minutes.

Remove from oven and pour in the prepared batter from above.

Bake for 23 to 25 minutes, or until golden brown.


Great served with chili or homemade soups.
