Roasted Carrots

An easy and tasty vegetable dish, sure to please.




1 lb fresh carrots

6 Tbs. Italian dressing, divided




Preheat oven to 450 degrees

Cut carrots into 1-1/2 to 2" pieces.

If carrots are thick, slice the pieces in half lengthwise for even roasting

Place in a shallow baking pan. Stir and toss with 2 Tbs. of dressing.

Cover with foil and bake for 20 minutes.

Remove the foil. Stir and bake an additional 20 - 25 minutes, or

until the carrots are crisp-tender, stirring occasionally.

Toss with the remainder of the dressing and serve.


Makes 4 servings.
