Chive Potato Cakes

This recipe is a slight variation on a potato cakes recipe I have always used. 

You can also substitute chopped onions, green peppers, etc. 



2 cups of mashed potatoes

1 egg

1 Tbs. flour

2 Tbs. milk

1 Tbs. dried chives

1/4 cup vegetable oil



Mix mashed potatoes, egg, flour, milk, and chives thoroughly.

Shape into flat cakes, about 1/2 inch thick.

Heat oil in skillet.

Add potato cakes to hot skillet and cook until golden brown on both sides.
