Oven Baked Breaded Pork Chops

Can
be prepared up to the baking process & refrigerated
1 egg

tsp black pepper
¼ cup milk
4
pork loin or rib chops 3/4” thick
1 cup corn-flake crumbs
¼
cup bacon drippings
1 tsp salt
Beat egg & milk together. Mix crumbs, salt, & pepper. Spread about ¼ of
crumb mix on wax paper.
Dip a chop into egg mixture, drain, & coat with crumbs. Repeat until all
chops are coated.
Heat drippings in a heavy skillet. Brown chops in gently sizzling drippings only
until golden. Brush drippings over bottom & sides of a baking pan that has a
tight fitting lid & layer chops into pan.
Cover pan & bake at 300° F 45 min. to an hour, until chops are fork-tender.
Or cover tightly & cook over very low heat on a range top or in a portable
appliance, but chops will not be as tender & juicy as oven-baked ones.
Pork chops are good with applesauce, fried apples, or baked apples.
