Mango Rice Salad

This is a tasty and refreshing salad recipe that everyone will enjoy.

The sweet mango makes the tangy rice refreshingly different.

Ingredients:

1 cup uncooked rice

1 cup chopped pecans

1/2 cup bottled Italian salad dressing

2 Tbs. lime juice

1 Tbs. grated lime zest

1 mango, peeled, seed removed, diced

1/2 red onion, chopped, 3/4 cup

2 Tbs. chopped fresh cilantro

Cook the rice according to package directions. Rinse under cold water until cool. Reserve. Dry heat a skillet over medium heat. Add pecans; stirring until lightly browned, 3-4 minutes. Reserve. In a large serving bowl, combine the salad dressing, lime juice and zest. Add mango, onion, and cilantro and reserved rice and pecans. Toss to combine. Serve.
