James Beard's Hamburger Steak

I love James Beard's cookbooks. The following is a simple, delicious recipe from his "Beard On Food" for his version of hamburger steak.
Ingredients:
Finely
grate an onion (letting the juice drip into the meat) over the patted out ground
meat.
Mix in 1 to 2 tablespoons of heavy cream or Half-Half.
Shape
into patties, and add a little black pepper.
Directions:
Fry for 4 to 5 minutes on each side over high heat in a heavy cast iron
skillet (or similar heavy skillet) in a little butter mixed with oil to keep the
butter from burning.
Time depends on how you like the inside cooked.
Salt
just before serving.
Serve either on a buttered, toasted bun, or with sliced tomatoes & home
fried potatoes.
