James Beard's Hamburger Steak

I love James Beard's cookbooks. The following is a simple, delicious recipe from his "Beard On Food" for his version of hamburger steak.



Finely grate an onion (letting the juice drip into the meat) over the patted out ground meat.
Mix in 1 to 2 tablespoons of heavy cream or Half-Half. 

Shape into patties, and add a little black pepper.


Fry for 4 to 5 minutes on each side over high heat in a heavy cast iron skillet (or similar heavy skillet) in a little butter mixed with oil to keep the butter from burning.

Time depends on how you like the inside cooked.

Salt just before serving.

Serve either on a buttered, toasted bun, or with sliced tomatoes & home fried potatoes.
