Glazed Baby Carrots

Here's a very easy side dish to make that will go with any occasion. 

 

 

  

Ingredients:

 

    2 Tbs. Unsalted butter; melted

1 lb baby carrots

2 Tbs. fresh orange juice

1 Tbs. light brown sugar

1/4 tsp. cinnamon

1/4 tsp. salt

1/8 tsp. black pepper

 

Directions: 

 

In a large sauce pan, cover the carrots with water and boil until tender.

Drain carrots and place in a baking dish.

In a small saucepan, place the melted butter, orange juice, brown sugar, cinnamon, salt, and pepper.

Cook on medium heat until solution thickens.

Pour over carrots and heat in oven at 350 degrees for 20-30 minutes or until a slight glaze appears.

 

**For added flavor, stir in some slivered almonds prior to baking. 

Yield: 6 Servings
