Garlic Green Beans Mexicana

Here's a vegetable dish that has always been a favorite at my
Daylily Society meetings/dinners. (we love to eat) :))
2 Tbs. olive oil
1 cup of finely chopped onion
1 clove of garlic, minced
2 lbs. fresh green beans, trimmed
1 tsp. ground cumin
3/4 tsp. salt
1/8 tsp. cayenne pepper (optional)
1/2 cup chopped roasted red peppers (available in jars)
In a large nonstick skillet, heat the olive oil over medium high heat. Add onion and garlic;
cook while stirring often for 2 minutes. Stir in the green beans, cumin, salt, and if preferred, cayenne pepper.
Cover. Cook, stirring occasionally until the green beans are tender. Usually about 10 minutes.
Stir in the red peppers and cook until heated through, about 2 minutes.
That's it!! Serve while hot.
