Cornmeal Griddle Cakes

Ingredients:
1-1/2 cups all-purpose flour
4 tsp. sugar
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 cup cornmeal
1/1/4 cups boiling water
1/3/4 cups buttermilk
3 Tbsp. butter, melted
2 eggs, beaten
Directions:
In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Set aside
Place cornmeal in a large bowl, stir in boiling water.
Add buttermilk and butter.
Wisk in eggs.
Stir into dry ingredients just until moist.
Pour batter by 1/4 cupfuls onto greased hot griddle.
Turn when bubbles form on top.
Cook until second side is golden brown.
Yields about 20 griddle cakes.
