Chocolate Brownie Mint Silk Cake
This is a triple-layer mint dessert that is very easy and quick to make. I have taken this to several social gatherings (eatun meetuns as they say), and it has been a hit with everyone. I cheat by using store bought fixings for all of it, but the time saved and the great taste makes one quickly forget that "faux pas" of cooking.
Ingredients:
1 pkg. (approx 20 oz.) dark chocolate fudge brownie mix
1 pkg. Chocolate Silk Pie mix
1/2 tsp. peppermint flavoring
1/4 cup Baker's chocolate, shaved into slivers
2 tubs (8 oz each) frozen whipped topping (extra creamy if possible)
Preheat oven to 350 degrees F. Coat a 9" spring form pan with cooking spray. Prepare the brownie mix according to package instructions. (note, you will get Oreo crumbs with the Silk Pie mix. I usually just throw them in with the brownie mix so as not to waste them. Your choice on that one. ) Pour brownie mix into pan and bake 30 minutes, or until toothpick inserted in center comes out clean. Cool.
Prepare the Chocolate Silk Pie mix as instructed, adding 1/2 tsp. of peppermint flavoring into the mix. Spread over the cooled brownie mix and refrigerate for 2 hrs. Run a knife around the edge of the cake to make sure that the brownie and silk layers are separated from the springboard sides. Spread the 3 tubs of thawed whipped topping on top of the Chocolate Silk. Garnish with slivers of baker's chocolate, slice, and serve.
