Cajun Potatoes

Nothing ordinary about these potatoes. Low fat, and very tasty. 


1 lb. baking potatoes
2 Tbs. chopped fresh parsley
2 tsp. canola oil
1/4 tsp. ground black pepper

1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground red pepper
1/2 tsp. dried thyme 


Preheat oven to 400 degrees.

Wash potatoes and peel if you prefer. Cut lengthwise into wedges.

Toss potatoes with the canola oil to start, then toss with the herbs and spices until evenly coated.

Place potatoes in a single layer on an un-greased baking pan and bake 45-50 minutes, turning the

wedges halfway through cooking time.

Serve immediately.
