Brussels Sprouts With Bacon Or Pancetta

A great Fall and Thanksgiving Vegetable!!





1 lb. fresh Brussels sprouts, cleaned and trimmed (cut large sprouts in half)

2 Tbs. olive oil

7 or 8 pcs. bacon or Pancetta (Italian bacon)

2 cloves garlic minced


Red pepper flakes

3/4 cup low salt chicken broth




Cook Brussels sprouts in boiling salted water for about 4 minutes, and drain.

Heat olive oil in a large skillet over medium heat. 

Add bacon or pancetta and cook until starting to crisp.

Add garlic and sauté about 2 minutes. 

Add the cooked Brussels sprouts and sauté until cooked and starting to brown, 5 to 8 minutes.

Season with salt and red pepper flakes to personal taste.

Add the chicken broth and simmer over low heat until broth reduces.

Serve hot.
