Pasta And Mushrooms *

Another easy and tasty vegetable dish, sure to please.



1 pound linguine or other type long pasta

Course salt and ground pepper

2 Tbs. olive oil

2 pounds of assorted fresh mushrooms, cleaned and sliced 1/2" thick

6 garlic cloves, sliced

1 cup finely grated Parmesan cheese, plus some extra for serving



Cook pasta in a large pot of boiling water until tender. Reserve 1 cup of cooking water.

Drain pasta and return to pot.

Meanwhile, heat oil in a large skillet over medium-high heat. Add mushrooms and garlic, season

with salt and pepper. Cover skillet and cook, tossing occasionally until mushrooms have softened

and released their liquid (7 -10 minutes). Uncover skillet and reduce heat to medium. Continue cooking, tossing occasionally until mushrooms are tender and browned (additional 10 -12 minutes).


Add mushroom mixture and Parmesan cheese to pasta and toss to combine. Add as much reserved pasta water

as is necessary to create a light sauce. Serve immediately. Top with more Parmesan cheese.
