Low-Fat Chili

 

Ingredients:

1 medium onion, chopped

1/4-1/2 cup chopped green pepper

4 cups water

1 can (16 oz.) northern beans, rinsed and drained

1 can (16 oz.) navy beans, rinsed and drained

1 can (6 oz.) tomato paste

1 can (14-1/2 oz.) diced tomatoes, undrained

2 to 4 tsp. chili powder

1 tsp. salt (optional)

1/2 tsp. black pepper

 

 Directions: 

In a large saucepan, cook the onion and green peppers in 1/2 cup of water until tender.

Add beans, tomato paste, and tomatoes.

Stir in the chili powder, salt, pepper, and remaining water.

Bring to a boil. Reduce heat and simmer for 20 minutes.

Serve garnished with chopped green onions.
